In a small local market in Sena, Ayutthaya,
there is a humble coffee shop called Wayla Coffee & Bake.
It’s not a big café.
It’s not luxurious.
But it holds something far greater inside—
a deep desire to learn.
Khun Mai — Tidarat Kaownate —
started her journey with very little knowledge about coffee.
She only knew one thing:
: There must be more to “good coffee” than just strength and sweetness.
And she carried one important question with her:
: “What does truly delicious coffee look like… according to international standards like SCA?”
That question
became the beginning of everything.
When Khun Mai came to learn,
she did not come with skills.
She came with clarity of intention.
From someone who didn’t yet understand extraction,
who didn’t know the importance of ratios,
who couldn’t distinguish under from over extraction—
she began learning
one shot at a time.
One mistake at a time.
One improvement at a time.
At first, like many, she chased the idea of a “Perfect Shot.”
But gradually, she discovered something deeper:
Coffee is not about perfection—
it’s about finding the Sweet Spot of each coffee.
She learned to listen to the coffee,
to read the extraction,
and eventually… to control the flavor.
Cup by cup. Shot by shot.
No longer just following a recipe—
but designing taste with intention.
And perhaps the most remarkable part of her journey…
was milk.
From a complete beginner,
Khun Mai developed the ability to texture milk
with a level of smoothness, consistency, and finesse—
that is comparable to a professional instructor.
Which, in reality,
is one of the hardest skills for most baristas to master.
In the end,
Khun Mai didn’t just learn how to make coffee.
She learned how to understand coffee.
From a small shop in a local market,she now holds something that many larger cafés still lack:
Standards. Understanding. And True Intention.
And this is what matters most:Starting from “not knowing” is never the problem.

The Barista Skills course
equips learners with essential practical skills required for working behind the espresso bar. Participants will master tasks such as setting up grinders, pulling espresso shots, frothing and texturing milk for cappuccinos, and crafting latte art. Additionally, the course covers important topics like health and safety protocols, customer service standards, and basic business management practices, providing a comprehensive foundation for barista professionals.
The Brewing courses
provide an in-depth exploration of various coffee brewing methods and the key variables that impact brew quality. With a strong emphasis on hands-on learning, participants will focus on important aspects such as grind size profiles, different brewing techniques, measuring coffee strength, and charting coffee extraction. This practical approach ensures a thorough understanding of how each brewing element influences the final cup.
The Roasting modules provide comprehensive knowledge about the roasting process, covering topics such as the roast cycle, various roast levels, and the identification of common defects. Participants will also explore the physical transformations that coffee beans undergo during roasting, along with essential aspects of workspace management and lean production techniques to optimize efficiency and quality in a roasting environment.
Green Coffee courses
offer a comprehensive understanding of the evaluation, trade, and handling of green coffee beans. These courses cover key topics such as the botany of coffee, farming practices, processing methods, grading systems, proper storage, and transportation logistics. Additionally, students will explore green coffee markets, certifications, contract negotiation, and more, equipping them with the essential knowledge required for navigating the global coffee supply chain.
The Water and Preventive Maintenance Foundation course
offers an introduction to key concepts in water treatment systems and the preventive maintenance of coffee machines. Participants will learn practical skills to apply this knowledge safely. By the end of the course, learners will be able to identify the typical components, functions, and impacts of water treatment systems, as well as understand their maintenance requirements. The course covers important water parameters, quality recommendations, and teaches how to measure water composition. Additionally, learners will understand the goals of a preventive maintenance program and be able to identify components in espresso machines, batch brewers, and grinders that require regular maintenance. Practical steps for carrying out these tasks with the right tools and supplies will also be demonstrated.
Sustainable course
for the specialty coffee industry to flourish and endure, sustainability must be adopted by all participants throughout the value chain. The Coffee Sustainability Program delves into the true meaning of sustainability, addressing the challenges faced by the coffee industry in implementing sustainable practices across each stage of the coffee value chain.
