Kenny (Tu Kun-Yu) is the Factory Director of dAVinci Coffee Roasting Factory in New Taipei City, Taiwan, and a highly experienced coffee educator and evaluator. From 2021 to 2025, he served as both National and International Judge for the Cup of Excellence (COE) in Taiwan, gaining deep expertise in coffee assessment and international collaboration. He has worked closely with local coffee farmers to improve flavor profiles and promote the value of Taiwanese specialty coffee to the global market.
In 2021, Kenny organized Taiwan’s first Electric Cup Roasting Exchange Competition, highlighting the potential of small electric coffee roasters for home use and generating widespread interest in electric roasting. He has also hosted various pour-over and roasting competitions, demonstrating his hands-on approach to coffee promotion.
Currently, Kenny teaches roasting, brewing, sensory evaluation, water testing, and sustainability at the dAVinci Coffee Training Center. He is passionate about developing new talent in coffee competitions and will soon be teaching professional-level classes in Chinese here in Thailand, combining theory and practice for a complete learning experience.

2021年至2025年,他连续四年担任台湾卓越杯 (Cup of Excellence) 国际竞标国家暨国际评审,积累了丰富的评审与交流经验。他长期深入台湾咖啡产地,辅导咖啡农优化风味并提升产业价值,致力于将台湾精品咖啡推广至国际市场。
2021年,Kenny 在台湾主办了首届以电力为主的烘焙竞赛——电气杯烘焙交流赛。该赛事推广以家用为主的小型插电式咖啡烘焙机,成功激发了大家对电力烘豆机的兴趣。此外,他还多次组织手冲咖啡与烘焙赛事活动,拥有丰富的咖啡推广实践经验。
目前,Kenny 在达文西咖啡教学中心负责烘焙、萃取、感官、水质检验与永续课程教学,并积极培育咖啡竞赛选手,对教学充满热情与经验。
Thailand Barista School is proud to announce that our founder and head trainer, Dr. Tana Toommanon, has officially been recognized as a Q Instructor under the supervision of the Specialty Coffee Association (SCA).
This prestigious appointment authorizes Thailand Barista School to offer official Q Grader Certification Courses, empowering coffee professionals to achieve one of the most respected qualifications in the specialty coffee industry.
The Q Grader Certification Course is planned to launch by the end of 2025.The course will align with the new Evolution Q Grader System, incorporating the Coffee Value Assessment (CVA) framework.Course enrollment will open as soon as the official curriculum and examination guidelines are finalized by SCA.

Diploma Course
This new set of diplomas provides in-depth knowledge and hands-on experience that you can directly apply in the coffee industry. Each diploma combines advanced learning with foundational coursework, ensuring a comprehensive understanding of each subject. Explore the details of each diploma below, including their specific areas of focus and required courses.
Sensory Skills courses delve into the key concepts and techniques involved in evaluating coffee and related products. These interactive courses cover a wide range of topics, including sensory science, industry-specific protocols, common sensory characteristics of coffee, physiological sensory training, and how to implement sensory programs. Additionally, participants will learn how to design consumer testing and apply sensory evaluation techniques in a business context, providing a well-rounded understanding of sensory analysis in the coffee industry and beyond.
The Barista Skills course equips learners with essential practical skills required for working behind the espresso bar. Participants will master tasks such as setting up grinders, pulling espresso shots, frothing and texturing milk for cappuccinos, and crafting latte art. Additionally, the course covers important topics like health and safety protocols, customer service standards, and basic business management practices, providing a comprehensive foundation for barista professionals.
The Brewing courses provide an in-depth exploration of various coffee brewing methods and the key variables that impact brew quality. With a strong emphasis on hands-on learning, participants will focus on important aspects such as grind size profiles, different brewing techniques, measuring coffee strength, and charting coffee extraction. This practical approach ensures a thorough understanding of how each brewing element influences the final cup.
The Roasting modules provide comprehensive knowledge about the roasting process, covering topics such as the roast cycle, various roast levels, and the identification of common defects. Participants will also explore the physical transformations that coffee beans undergo during roasting, along with essential aspects of workspace management and lean production techniques to optimize efficiency and quality in a roasting environment.
Green Coffee courses offer a comprehensive understanding of the evaluation, trade, and handling of green coffee beans. These courses cover key topics such as the botany of coffee, farming practices, processing methods, grading systems, proper storage, and transportation logistics. Additionally, students will explore green coffee markets, certifications, contract negotiation, and more, equipping them with the essential knowledge required for navigating the global coffee supply chain.
The Water and Preventive Maintenance Foundation course offers an introduction to key concepts in water treatment systems and the preventive maintenance of coffee machines. Participants will learn practical skills to apply this knowledge safely. By the end of the course, learners will be able to identify the typical components, functions, and impacts of water treatment systems, as well as understand their maintenance requirements. The course covers important water parameters, quality recommendations, and teaches how to measure water composition. Additionally, learners will understand the goals of a preventive maintenance program and be able to identify components in espresso machines, batch brewers, and grinders that require regular maintenance. Practical steps for carrying out these tasks with the right tools and supplies will also be demonstrated.
Sustainable course for the specialty coffee industry to flourish and endure, sustainability must be adopted by all participants throughout the value chain. The Coffee Sustainability Program delves into the true meaning of sustainability, addressing the challenges faced by the coffee industry in implementing sustainable practices across each stage of the coffee value chain. Through this program, learners will explore the complexities and responsibilities required to achieve a more sustainable future for the specialty coffee industry.

Dr. Tana Toommanon, better known as Dr. Bay, is a highly accomplished coffee educator, consultant, and entrepreneur. With a Ph.D. in Information Technology and extensive expertise in database systems and AI, Dr. Bay made a distinguished transition into the world of specialty coffee education.
As an Authorized Specialty Coffee Association (SCA) Trainer (AST) certified across Barista, Brewing, Roasting, Sensory, Green Coffee, Water, and Preventive Maintenance modules, he also holds the prestigious license of a Q Instructor under the evolved Coffee Value Assessment (CVA) framework. His multi-diploma achievements in Café, Roastery, and Trading Diplomas further reflect his commitment to excellence.
Dr. Bay is the founder of Thailand Barista School, a premier training center specializing in one-on-one private SCA courses taught in both Thai and English. His unique teaching approach blends empirical science, precision analytics, and sensory artistry, aiming not just to impart skills but to build industry leaders who can compete on the global stage.
